Line a baking sheet with parchment paper. Working one cookie at a time, drop a cooled wafer into the melted chocolate. Transfer the baking sheet to the freezer for10–15 minutes, until the chocolate is completely set and no longer tacky to the touch. Store in the Freezer (Yes, Really)

Once the chocolate is fully set, transfer the cookies to an airtight container, layering them between sheets of parchment paper. Store in thefreezerfor up to 3 months. Eat them straight from the freezer — they're meant to be cold. The chocolate stays snappy and the wafer stays crisp.

Room temperature Thin Mints are sad Thin Mints. The freezer is where they shine. I keep mine in a gallon-size freezer bag and pull out a few at a time.
