I've tried to shortcut this. I've put dough in the freezer for 30 minutes instead. I've rolled it warm and chilled the cut shapes. None of it works as well as a proper 2-hour fridge rest. The texture is just different — softer, less crisp, less professional-looking.
Rolling, Cutting, and Baking (The Temperature Control Stage)
Preheat your oven to 350°F (and actually wait for it)
Set your oven to 350°F (175°C) and let it fully preheat — this takes 15–20 minutes for most home ovens, not the 5 minutes the beep suggests. If you have an oven thermometer, use it. My oven runs 25°F cool, so I set it to 375°F to get an actual 350°F.
Line two rimmed baking sheets with parchment paper or silicone mats. Do NOT use unlined metal sheets — the bottoms will overbrown before the tops are done.
Oven temperature is the single biggest variable in cookie baking. If your cookies spread too much, your oven is too cool. If they brown too fast, it's too hot. An oven thermometer costs $6 and will solve 80% of baking frustrations.
Roll the dough to exactly ¼ inch thick (use guides if you have them)
Lightly flour your work surface and rolling pin. Unwrap one dough disk and place it on the floured surface. Roll from the center outward, rotating the dough 90 degrees after every few rolls to maintain an even thickness.
You wantexactly ¼ inch thick— not thinner, not thicker. Too thin (⅛ inch) and the cookies will brown too fast and taste more like crackers. Too thick (⅜ inch) and the centers will stay soft while the edges burn.
If you have rolling pin guide rings (the rubber bands that clip onto the pin), use them. If not, use two ¼-inch-thick wooden dowels or rulers placed on either side of the dough as guides.
The dough should feel cold and firm as you roll. If it starts to soften or stick, slide the whole sheet of dough (still on the counter) into the fridge for 10 minutes to re-chill.
I use wooden dowels from the hardware store — they cost $2 and work better than any fancy rolling pin I've ever owned. You can also buy adjustable rolling pins with thickness rings, but honestly, dowels are fine.
Cut out bunny shapes and re-chill before baking
Dip your bunny cookie cutter in flour, shake off the excess, and press straight down through the dough — don't twist, or you'll seal the edges and the cookies won't rise properly. Lift the cutter straight up.
Use a thin metal spatula to transfer each cut cookie to your prepared baking sheet, spacing them 2 inches apart. They'll spread slightly, but not much if your dough is cold.
Gather the scraps, press them together (don't knead or overwork), re-roll to ¼ inch, and cut more shapes. You can re-roll scraps twice before the dough gets tough from overhandling.
Critical step:Once your baking sheet is full, slide the entire sheet into the fridge for 15 minutes before baking. This re-chills the butter so the cookies hold their shape in the oven instead of spreading into blobs.
The first time I made these, I skipped the re-chill because I was in a hurry. The bunnies lost all their detail — the ears melted into the heads, the shapes puffed and spread. Fifteen minutes in the fridge saves hours of frustration.

Bake until the edges are just set (not browned)

If you wait until they look fully baked in the oven, they'll be overbaked and hard once they cool.
Watch for these visual cues: the edges lose their wet sheen and turn matte. The centers puff slightly, then start to deflate. If you see any browning on the tops, you've gone too far — pull the next batch 1–2 minutes earlier.
I set a timer for 10 minutes, then watch like a hawk. At 11 minutes, I pull one cookie off with a spatula and let it cool for 60 seconds — if it firms up and doesn't feel wet or raw, the batch is done. If it's still soft and bendy, I give the rest another minute.
Cool completely on the sheet, then transfer (patience required)
Let the cookies sit on the baking sheet for 5 minutes after removing from the oven. They'll be very soft and fragile — if you try to move them now, they'll break or bend.
After 5 minutes, use a thin metal spatula to carefully transfer them to a wire cooling rack. They should lift cleanly without sticking. Let them cool completely — about 30 minutes — before decorating. They'll continue to crisp as they cool.
When fully cool, the cookies should have a firm, crisp texture that snaps cleanly when you break one in half. If they're still soft or bendy after cooling, your oven was too cool or you underbaked them.
The snap develops during cooling. I've tested this by eating one cookie every 5 minutes (for science) — at 5 minutes post-oven, it's soft. At 15 minutes, it's starting to firm. At 30 minutes, it has that professional bakery snap.
Royal Icing and Decorating (The Part That Looks Harder Than It Is)
Make the royal icing to 'stiff peaks' consistency
In a large bowl (or stand mixer), whisk together the meringue powder and water until frothy — about 30 seconds. Add the powdered sugar and vanilla extract. Beat on low speed for 1 minute to combine, then increase to medium-high and beat for 5–7 minutes.
You're looking forstiff peaks— when you lift the beater, the icing should stand straight up without drooping. If you drag a knife through it, the line should stay clean and sharp, not fill back in.
This is your base icing. You'll thin portions of it for flooding (see next step), but keep some at stiff-peak consistency for piping outlines and details.
Meringue powder is not the same as powdered egg whites — it contains stabilizers that help the icing set hard and shiny. You can find it at craft stores (Wilton brand) or order it online. Don't substitute with fresh egg whites unless you're comfortable with raw eggs.
Divide and thin the icing for outlining and flooding
Divide the stiff icing into separate bowls — one for each color you're using. Add gel food coloring (NOT liquid food coloring, which will thin the icing too much) a tiny bit at a time, stirring until you reach your desired shade.
For outlining:Keep about ⅓ of each color at stiff-peak consistency. Transfer to a piping bag fitted with a #2 or #3 round tip (or use a zip-top bag with a tiny corner snipped off).
For flooding:Thin the remaining ⅔ of each color with water, adding ½ teaspoon at a time and stirring thoroughly. You want '15-second consistency' — when you drizzle a ribbon of icing back into the bowl, it should disappear back into the surface within 15 seconds. If it disappears faster, it's too thin (add more powdered sugar). If it takes longer than 20 seconds, add another ¼ teaspoon of water.
I use Americolor or Chefmaster gel colors — a little goes a long way. Start with a toothpick-sized amount and add more gradually. You can always add more color, but you can't take it out.
Outline first, flood second, let dry completely
Using your stiff-consistency icing in a piping bag, pipe a thin outline around the edge of each cookie, about ⅛ inch from the edge. This creates a dam that keeps the flood icing from running off the sides.
Let the outlines set for 10–15 minutes — they should feel dry to the touch and not smudge when you gently tap them.
Once the outlines are set, use a spoon or a squeeze bottle to fill the center of each cookie with the thinned flood icing. Use a toothpick or scribe tool to guide the icing into corners and pop any air bubbles.
Let the cookies dry completely — at least 4 hours at room temperature, or overnight if possible. The icing should be hard, shiny, and completely dry to the touch before you stack or package them. If you try to stack them while still tacky, they'll stick together and ruin all your work.
I dry mine overnight on the counter, uncovered. If you're in a humid climate, you can put them in front of a fan to speed drying, but don't refrigerate — condensation will make the icing weep and lose its shine.

Add details and let them set (optional but adorable)
Once the base flood icing is completely dry (4+ hours), you can add details: dots for eyes, a pink nose, inner ears in a contrasting color, or a fluffy cotton-ball tail.
Use stiff-consistency icing in a piping bag with a small round tip. Pipe directly onto the dried base layer. If you're adding a cotton-ball tail, use a small amount of white royal icing and rough it up with a toothpick to create texture.
Let the details dry for at least 2 hours before handling or packaging.
For the cotton-ball tail effect, I pipe a small blob of white icing, then use a toothpick to pull little peaks out from the center — it looks fuzzy and three-dimensional. It's the detail that makes people think you went to pastry school.
