Bake one sheet at a time on the center rack for 10-12 minutes. The cookies are done when the edges are set and just starting to turn golden, but the centers still look slightly underdone and soft — they should not be browned all over.

The thumbprints will puff up slightly during baking. Don't panic — you'll re-press them in the next step. If you overbake them, the dough will be too firm to re-press without cracking.

My oven runs hot, so I check at 10 minutes. If your cookies are browning on the bottom before the tops set, your oven rack is too low — move it up one level.

As soon as you pull the baking sheet from the oven, use the back of a ½-teaspoon measuring spoon (or your thumb, if you're brave) to gently re-press the center of each cookie. The dough will still be soft enough to reshape, and this step restores the deep nest that puffed up slightly during baking.

Work quickly — the cookies firm up as they cool. If you wait more than 2 minutes, the dough will be too set and will crack when you press it.

This is the step I forgot the first time I made these, and the nests were too shallow to hold the jam. The jam just pooled on top and slid off when I tried to eat them. Re-pressing is non-negotiable.

Let the cookies cool on the pan for 5 minutes, then transfer to a wire rack

Leave the cookies on the baking sheet for 5 minutes — they're too soft to move immediately and will break if you try. After 5 minutes, use a thin metal spatula to transfer them to a wire rack to cool completely, about 20 minutes.

Don't skip the wire rack — if you let them cool on the pan, the bottoms will steam and get soggy, and the nests will lose their crisp edges.

If a cookie breaks when you try to move it, it needed another minute on the pan. Just leave the rest a little longer.

Fill the nests with jam once the cookies are completely cool

Spoon about ½ teaspoon of jam or fruit preserves into the center of each cooled cookie. Use a small spoon or a piping bag with a small round tip for precision.

Don't fill them while they're warm — the jam will melt and soak into the cookie, making the nest soggy and losing the visual contrast. Completely cool cookies (room temperature or even slightly chilled) hold the jam in place and keep it glossy.

I use seedless raspberry jam because the seeds in regular jam can be gritty. Apricot, strawberry, or even lemon curd work beautifully here.

Let the jam set for 10 minutes before serving or storing

Let the filled cookies sit at room temperature for 10 minutes so the jam firms up slightly. This makes them easier to handle and prevents the jam from smearing when you stack or package them.

Store in an airtight container at room temperature for up to 5 days, or freeze (unfilled) for up to 3 months. If freezing, add the jam after thawing.
